Spring Truffles Ready at Indulgence Chocolatiers

Today I stopped into Indulgence Chocolates to see what to expect on our upcoming tours. As I expected, they have special truffles for the season: Meyer Lemon Rosemary, Peach Lavender, Banana Coconut Caramel, Pistachio Cardamom, Lychee Hibiscus, and Strawberry Almond Coriander.

Strawberry Almond Coriander Truffle

Strawberry Almond Coriander was the first to catch my eye. That’s because they actually look a bit like a strawberry. They are made from a caramelized white chocolate shell with layers of strawberry pate de fruit (this is similar to jam but cooked to a higher temperature). Then they have a layer of almond puree mixed with cocoa and a touch of coriander.

Cereal Milk Truffle

Another type of truffle I hadn’t seen before is called cereal milk. These are designed to taste like the sweet milk left at the end of a bowl of sugar cereal.

Mint Julip Truffle

The truffle of the hour is the mint julip, special for the Kentucky Derby. This truffle has a dark chocolate shell with vanilla bourbon caramel. It’s filled with a mix of white chocolate infused with fresh mint and tastes just like the cocktail. Wow! These will only be around for a short time (remember the Kentucky Derby is this weekend!)

 

The hardest thing on a seven seat bike tour may be choosing which truffles to get. We never have leftovers at Indulgence!
